In the past I'd have used the original episodes pretty much unedited and got Craig back to voice them all again. Now you'd need to do some kind of enhancement to the footage to make it at least feel as modern as possible. I don't know if AI is quite up to the job yet of adding in more to the sides of the picture to make it widescreen (not zooming in like Sky did), but doing that and upscaling it would help make it feel more recent. You'd need to make it as 'new' as possible to entice general viewers to watch honestly.
I'd also make a real cohesive story running through the whole thing, linking episode to episode. Challenge did that a bit with the specials, but more so.
